I love the method of cooking pasta as you would make risotto. No boiling of the pasta. Instead, the dry pasta is added to a skillet, while slowing adding tomato-flavored stock stirring and cooking it gently. Did I mention this is a spicy pasta dish? Spaghetti all’Assassina “killer-hot”, but we can tone it down as desired.
