The World in a Skillet – Milk Street

In this class we offer a focus on recipes from Milk Street, the popular PBS television show. Kitchens across the world have their own unique recipes that are prepared in a single vessel, whether it be a wok, tagine or a 12-inch skillet. Get ready for an around the world adventure – no passport required!

Japanese-Style Chicken Meatballs (Tsukune) The meatballs are tossed in a spicy hoisin sweet chili glaze, served with a lettuce cup salad.

Shrimp Rougail from the island of Reunion off the east coast of Africa. The shrimp are sauteed in a skillet with a spicy creole sauce made with ginger, garlic and tomatoes.

Ethiopian-Style Beef with Onion and Berbere (Zilzil Tibs) Sliced beef is seasoned with an Ethiopian spice blend of garlic, ginger, coriander, rosemary, paprika, and other spices, known as berbere. Served with butter-glazed carrots.

Spanish Baked Rice with Potatoes and Chorizo (Arroz al Horno) This Valencian dish is traditionally cooked in a ‘cazuela’, which is a round terra-cotta vessel. We will use a 12-inch skillet to make this paella-like side dish.

Italian Butter Cookies (Canestrelli) These delightful cookies, traditionally made throughout Italy with regional differences, offer a perfect sweet treat for a light dessert.
