Choux pastry is a light and airy dough that is used to create a variety of desserts such
as eclairs, churros, and more. This dough is unique as it is twice-baked - first on the
stove to create a silky-smooth finish, and then in the oven to a golden perfection. The
dough is made with water, eggs, flour, and butter, and has a high moisture content that
causes it to rise, leaving space for delicious fillings such as pastry cream or other fun
fillings. You will work with Chef Stephen and then enjoy your sweet treats at the end of
class. Once you master making choux pastry, the possibilities of delicious treats that
you can create are endless. In this class you will make the following:
-Eclairs
-Paris Brest
-Chouquettes
-Churros
-Vanilla Bean Pastry Cream
-Hazelnut Mousseline
-Chocolate Ganache Glaze
